Pea and feta dip

 

Sweet peas blended together with fresh mint and tangy feta cheese makes for an amazing dip. I like to serve this up in the summer with a BBQ or with some simple warm flatbreads for a pre dinner snack over a glass of wine.

 

Ingredients

Serves 4


250g frozen peas
1 tsp salt
125g feta cheese
1/2 lemon
1 handful fresh mint
2-3 tbsp Extra virgin olive oil 

A little more olive oil for finishing

 

Here’s how:

 

Cook the peas for 1 minute in salted boiling water.
When the peas are cooked quickly drain them and plunge them into ice cold water. This ensures that you keep the vibrant green colour.
Place the cooked peas into a food processor with 100g of the feta cheese, the lemon juice, mint and olive oil.
Blend until smooth. Then taste and season with salt and pepper if required. Spread the dip onto a serving plate or a shallow dish and crumble over the remaining feta cheese. Drizzle over a little extra virgin olive oil for a smooth and silky texture.

Try serving this with a chilled glass of Riesling wine
