Baked Feta and Pistachio Dip




200g Feta cheese block

80g Pistachio nuts
1 Garlic clove
30g Fresh mint

1 Lemon zest only
40g Panko breadcrumbs

3 tbsp Olive oil


Here’s how:


Roast the pistachios in a non stick frying pan for 2-3 minutes in a splash of olive oil until golden.
Chop the garlic, roasted nuts and lemon zest together with the fresh herbs.
Add the breadcrumbs and mix together.

Drizzle a little olive on top of the block of feta and place it oil side down in the pistachio topping.
Transfer the cheese to a non stick baking tray and top with more of the breadcrumb mixture.

Cook in a pre heated he oven at 170c for 10-15 minutes or until the cheese is soft and spreadable.

Serve with crusty bread.
