Seeded Breakfast Snack Bars


This breakfast bar recipe is the perfect way to start a morning when you are in a rush. Packed full of goodness with a great source of slow release energy.



150g Chopped dates 50ml Apple juice
1 Banana
100g Butter

1 lemon zest and juice

200g Oats
40g Pumpkin seeds

10 Prunes chopped


Here’s how:


Place the chopped dates, apple juice and banana in to a medium sized pan with the butter.
Turn the heat on low and melt, but do not boil.
Using a stick blender, blend the mixture while still warm until smooth.

Stir in the oats, seeds and chopped prunes until all the ingredients are fully incorporated. This will be the key to the mixture holding together.
Line a 20 x 30cm baking tray with parchment paper, then spread the mixture out to approximately 2cm thick.
Bake in the pre heated oven 170c fan oven for 20 minutes.


Serve with a nice big cup of coffee
