Chocolate and Orange Marmalade Cake

 

Ingredients

 

250g Butter
225g Soft brown sugar
4 Large free range eggs

225g Self raising flour
35g Cocoa powder
1 Orange zest for the cake

 

For the topping

 

2 tbsp Marmalade

100g Dark chocolate

50ml Double cream

 

Here’s how:

 

Place the butter and sugar into mixing bowl and beat together until light, fluffy and creamy. I tend to use an electric mixer as it helps to really combine the butter and sugar.
Add the eggs one at a time, making sure each egg is fully incorporated before adding the next.

Once all the eggs are mixed in, place the flour and cocoa into a sieve and add to the mixture.
Finally, add the orange zest. Keep the rest of the orange for the top of the cake. Using a metal spoon fold the flour and cocoa into the egg mixture gently until mixed in.

Line a 2lb loaf tin with parchment paper or use a non stick loaf tin and add the cake mixture.
Bake in a pre heated oven 170c for 25-30 minutes or until the top of the cake is firm to the touch and springs back when you press it.

Once baked remove from the oven and leave to cool for 1 hour.
To make the topping, place the chocolate and 1 tbsp of the marmalade into a mixing bowl and sit it over a pan of simmering water until melted.
Meanwhile, slice the oranges and put in a frying pan with the remaining marmalade and 100ml of water.
Put the pan on the heat and simmer for 10 minutes until the orange slices are tender.
Once the chocolate is melted stir together and add the cream to form a glaze.

Pour over the top of the cake and spread out evenly.
Finally top the cake with the slices of cooked orange and leave to set.
