Fennel, Chilli and Sea Salt Fries


This seasoning will take your homemade fries or chips to the next level. You can also use this blend with chicken, pork or fish for a cracking flavour. Remember to keep your seasoning in an air tight container for next time.



Serves 4-6

6 Maris piper potatoes
2 tsp sea salt
1 tsp garlic powder
1 tsp dried onion powder 1 tsp fennel seeds

1 tsp chilli flakes

4 tbsp olive oil


Here’s how:

Peel and cut the potatoes into 1cm thick slices.
Cut the potato slices into 1cm chips.
Wash the chips under cold water to remove the starch.
Cook the chips in salted boiling water in a large pan.
The potatoes should boil for 4 minutes, then drain and leave to cool to get all the steam out of the potatoes.
Meanwhile place all the dried ingredients into a pestle and mortar and grind together to create this amazing seasoning.
Drizzle the cooked, cooled and dried potatoes with the olive oil and spread out on a non stick baking tray.
Cook the chips in a pre heated oven 190c until golden and crisp.
Remove from the oven and sprinkle the seasoning blend over the chips.
Keep the remaining seasoning in a jam jar in the cupboard for next time.
