Limoncello is an Italian lemon liqueur that is famous for its sweet and tangy flavour and bright yellow colour. It is made from lemon zest, alcohol, water, and sugar, and is typically served as a digestif after a meal. Limoncello is traditionally made in Southern Italy, particularly in the Amalfi Coast and Sorrento regions, where the local lemons are known for their intense fragrance and flavour.

Homemade Limoncello

Ingredients

6 Lemons, unwaxed are best or you can carefully pour boiling water from the kettle over the lemons to remove any possible wax
700ml bottle of Vodka
500g Sugar

400ml boiling water

Here’s how:

Peel the zest from all the lemons taking care to only remove the lemon zest not the white pith.
Put the zest in a large clean jar and pour over the vodka.
Cover with a tightly fitting lid and leave for a week, shaking the jar each day.

Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved.
Add to the vodka and peels and leave for a further week, shaking the jar regularly.
 Strain into clean sterile bottles.

Keep in the fridge and serve over ice straight or with sparking water .
