Soft Double Chocolate Crackle Cookies

 

These cookies are soft, chocolatey and delicious. They are really easy to make and a perfect project for the kids on a rainy day.

 

Makes approx 12 cookies

Prep time 60mins

Bake time 12 minutes

 

Ingredients

60g cocoa powder, sieved

200g caster sugar

60ml vegetable oil
1 orange (zest only, so have a glass of freshly squeezed orange juice afterwards)


2 large eggs 


180g plain flour

1 tsp baking powder


70g icing sugar

 

Here’s how:

Whisk together the cocoa powder, caster sugar, orange zest, oil and eggs. Then sieve the plain flour and baking powder into the chocolate mixture and mix together until it forms a dough.
Take a tablespoon of mixture and roll into a ball and place on a non stick baking tray. Continue this with the rest of the dough.

Place in the fridge for 45 minutes to firm up.
Preheat the oven to 190C.
Remove the cookies from the fridge and roll each cookie in icing sugar, coating them well.
Evenly space out the cookies back on the tray,
Place in the oven for 10 -12 minutes.
Remove from the oven and allow to cool.
