Sour Cherry Rocky Road

 

Rock road is a great way to use up leftover cakes, biscuits and dried fruit after a good baking session. For this recipe I have added broken up mince pie for a Christmas vibe. Good dark chocolate makes sure the rocky road is not too sweet and the fruit will give it a great flavour.

 

Ingredients


Makes 12 -1 6 portions

100g digestive biscuits
100g left over mince pies, chopped into chunks 100g sour cherries
135g butter
230g 70% dark chocolate
3 tbsp golden syrup
100g mini marshmallows

70g melted white chocolate to decorate

 

Here’s how:

 

Break the biscuits up in a bowl and mix together with the sour cherries, chunks of mince pies and mini marshmallows.
Melt the butter, chocolate and golden syrup together in a mixing bowl sat over a pan of simmering water.

Pour the biscuits, cherries, mince pie chunks and marshmallows into the melted chocolate and mix together.
Line a 20cm square brownie style tin with parchment paper and press the mixture in.

Using the back of a spoon smooth out the mixture, then drizzle the melted white chocolate over the top to decorate.
Place in the fridge for 2 hours to set.
